Just because you’re travelling and living a mobile life, doesn’t mean you should miss out on good food. Baked beans are ridiculously easy to make and once you’ve tried making your own, you won’t want to ever eat those bland sugary things you normally get premade in a can. You can add pretty much anything you like to jazz up your beans, bacon or prosciutto adds a meaty twist.
Ingredients

- 1 can white beans
- 1 can crushed or chopped tomato
- 1 clove garlic
- Olive oil
- 1 small-average onion
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon maple syrup
- 1 teaspoon mixed Italian herbs (optional)
- 150g bacon (optional)
- Salt and pepper to taste

Method
Chop the onion and brown them in a little olive oil, if you’re adding some bacon to your beans fry this up with your onions at the same time. Once the onions are starting to get a little colour, add your finely chopped or crushed garlic.
Add all the other items to the pot, bring to a simmer and cook for 3-5 minutes. Other interesting optional things to add to your beans, a handful of chopped Italian parsley near the end of cooking. If you’re going to have eggs with your beans you can be a little inventive, instead of frying or poaching your eggs in water, crack your eggs into the pot of beans, put on the lid and let the eggs poach in the beans. You can also put your beans into an ovenproof dish, crack your eggs into the beans, sprinkle with a little cheese and cook in a medium oven or place under a grill for a few minutes.
